Summary:
Our capstone’s primary objective is to develop a pick-to-zero warehouse operating model to maximize freshness of produce delivered to end consumers. A pick-to-zero strategy is an order-picking method in which shipments are received, processed, and dispatched from a distribution center (DC) to stores within a day, eliminating the need for on hand inventory at the DC. Along with maximizing freshness, we aim to quantify the trade-offs with cost and waste. The evaluation will guide our capstone sponsor to determine whether a pick-to-zero model is a viable and beneficial approach to delivering fresher produce.

  1. Excellent job, Kalyan and Shantanu. This capstone project assesses the effects on freshness, cost, and waste of adopting a pick-to-zero operation in a food retailer’s distribution center. The simulation model brought promising results. A very relevant topic for grocery retailers.
